Let’s talk food

So in an effort to get organized in this last full week before school starts (!) I have decided that I need to start to find some good recipes for dinner.  Every now and then I do this, when I find that we are ordering out more and more.  I don’t like to cook, and we are somewhat limited in the choices with a few picky eaters and the fact that we don’t eat red meat.

Also I am sick of hearing, “mexican food again??” or the song that always starts “beans beans the magical fruit, the more you eat the more you toot.”

It’s kinda weird when I realized that my kids have never had a hamburger.  It’s not that I won’t let them, I just stopped eating it before they were born so it was never available in our house.  Recently Austin decided he wanted to try a meatball sub from Subway.  He heard they were good from his buddy.  He got halfway through it.  He says he liked it ok, but went back to turkey the next time we went.

This summer we planted some peppers and tomatoes in pots as we have very little sun in our heavily treed yard.  I also planted the usually basil (we use this a ton for pasta), and rosemerry (for red potatoes and garlic- yum!).  I love using stuff that I have grown myself and only wish that I could grow more

Today I picked up the latest Real Simple with the 20 minute meal ideas- already a few have caught my eye- ravioli with sauteed zucchini, pasta with peppers and mozzarella.

If anyone has any good kid friendly, non-red meat ideas please point me in that direction!

    Turkey Burgers. I say this with all seriousness! A lot of people dislike them, but I think if you cook them right, they are more delicious than a regular burger (if that’s your thing).

    I generally add a little Worcestershire sauce, some minced garlic, salt, pepper, and onion powder into lean, ground turkey and let it marinate in the fridge for a while. Then I make patties (you can even add in some grated mozzarella if you’d like) and just grill them or broil them up.

    My Dad, who loves red meat, and my Mom, who hates turkey, loved them when I made them for fourth of July, and have now started making them more often.

    They go great with a quick cold pasta salad (feta cheese, olive oil, balsamic vinegar, minced garlic, whatever veggies you want, and penne or similar pasta cooked al dente) or a hot dish like homemade mac & cheese.

    Another thing that may work is turkey or chicken BBQ, or even veggie/turkey/chicken panninis. Good hearty bread, some sort of spread (mayo or garlic aioli, something like that), sliced veggies or turkey or chicken, and a good cheese like provolone or mozzarella, and thrown on the grill. It’s like a heartier, healthier grilled cheese that can really be a meal.

    My husband and I are students, so it’s hard for us to find the time to really make a good meal. I’ve started listing meal options on index cards (like one set of cards will be the starch, another meats, another veggies, another dessert) and we’ll shuffle them and just pick something out. It takes the decision-making and wishy-washiness out of it, and helps us to change things up and not get stuck and ordering in.
