Keep the good ideas coming.
As for kids and veggies and fruits, we have been all over the map. My kids have always started out great, well some better than others, and gone downhill fast when exposed to school, friends, etc.
But slowly they are coming around, Austin especially. He wants to try new stuff. Blake still has his standards- grapes, apples, bananas and then a few things like hummus. Cole is pretty good, if it is HIS idea. And he’s inconsistent- some days loves carrots, some days hates them.
But I am sneaky and I hide it in their food. My most favorite thing is to mix a jar of organic carrot baby food in the pasta sauce. They have gotten so used to it that they complain if it isn’t in there- of course they have no idea! I have another one where I stir fry cauliflower in their chicken and rice- it looks the same. I love being sneaky like that.
Tonight I tried a new recipe, you can find it here. It was sooooo good.
I made a few substitutions based on what I had on hand
I used two red peppers
no eggplant
no arugala
a little more balsamic vinegar
a little more feta
zucchini instead of squash
fresh tomatoes instead of sundried.
whole grain pasta
added pine nuts
This recipe is going into my favorites.
