Tortellini Soup

Ok here is the recipe for Tortellini Soup but keep in mind that

1. I made it up

and

2. I am not a very good cook. At. All.

Now that said this is a pretty good soup.

I take two cartons of organic chicken broth (I buy them by the case at costco). Add a bunch of chopped carrots (I love carrots so I add a ton), a few chopped up zucchinis, a few cloves of minced garlic, a couple cans of chopped tomatoes, oregano, pepper garlic mix.

Sorry I don’t have any exacts- I just throw it all together, starting with the carrots since they take the longest to cook.

When it is all done cooking, throw in the torts. My kids don’t like soup so I pull out some torts when they are done cooking (I cook them in the soup so they will absorb nutrients from the veggies) and then I top their torts with a mix of spaghetti sauce and a jar of baby food (either carrots or sweet potatoes) mixed together (I mix in a bowl before I top just in case they walk into the kitchen).

I top the tortellini soup with fresh parm cheese, serve with crusty bread. Yum. And very easy!
