I am so glad it’s Friday.  Although it’s a crazy one.  Lots of stuff going on today/tonight.  But right now- a big coffee and a little girl.

Just got the boys out the door- it’s arbor day.  Blake gets to head over to the green downtown, tonight is the talent show- Austin and his band are playing “Day Tripper” by the Beatles.  Video will be taken for sure.  Fo Sho.

About to head off for a walk- I have been trying to do something- gym or our usual 4 mile walk- every week day.  I just feel better when I do.

A couple nights ago I made fresh pesto and it was probably the best batch I have ever made.  It was so good I just kept dipping bread in it- yum!  Eventually I tossed it with some whole grain pasta and fresh parm cheese and shared with Andy- boys are still suspicious of pesto, it is green after-all

Start with the basil- I have three plants, I should probably get more since we eat so much of it

Add pine nuts.  I love pine nuts.

Here is the recipe

  • 3 cups fresh basil leaves
  • 1 1/2 cups chopped pine nuts
  • 4 cloves garlic, peeled
  • 1/4 cup grated Parmesan cheese
  • 1 cup olive oil
  • salt and pepper to taste

    I like to make it in big batches and then freeze it in old school ice cube trays. That way I have frozen cubes all year round and can make a quick pasta/pesto dish in minutes!
