YUM!

Ok I love that so many of you could relate to my little Coley man. He is a kid that has my heart gripped pretty tight but I am not afraid to also voice his faults. I am just happy that a lot of you are dealing with something similar. And it absolutely does not mean that our guys are not amazing boys. I often get accused of letting him get away with so much more than his older brothers (his older brothers are the ones that accuse me of this). But honestly, so far, they have been easier. Well easier and harder, just in different ways. Cole is for sure my first boy that has been over the top boy. Can’t sit still, has no fear, gets mad really easy…. But he is the one that loves his mama with a passion that I have never seen. My older two love me, absolutely. But my youngest boy loves me with no abandon, in a way that lets the world know it. He does not care who knows- he loves me.

I love that boy. Homework struggles and all.

So tonight I tried a new recipe and it was SO GOOD!!!

So I thought I would share.

2 whole Boneless, Skinless Chicken Breasts
4 cups Cooked Brown Rice
¾ cups Frozen Corn
15 ounces, fluid Can Black Beans, Drained And Rinsed
1 cup Plain Greek Yogurt (or Sour Cream)
4 ounces, fluid Can Green Chilis
½ cups Salsa
1 cup Low-fat Cheddar Cheese, Plus More For Topping
2 Tablespoons Fresh Cilantro For Garnish

Preheat oven to 350F. In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine. Make sure the yogurt and cheese are stirred in throughout the entire bowl. Season with salt and pepper if desired. Transfer to an oven-safe dish and top with extra cheese if you would like. Bake for 20-25 minutes, or until heated through. Garnish with chopped cilantro.

Enjoy!!

When I read this, I thought your son Cole sounds EXACTLY like my daughter Emma. You could have written that about her. SHe is nine and homework is my absolute least favorite thing we do together. And no one loves me like Emma. I always say, “Everyone needs an Emma to feel so loved”. However that girl can drive me insane! And then turn around and melt my heart in the same day. I have been glued to your house saga and I really hope it works out for you.

Cole sounds like Robbie. Robbie still tells my he loves me, and I get a hug and a kiss when he leaves. He doesn’t care who sees it. I love that about him, even when he drives me crazy!!

I absolutely love, love, love that Cole. I love his spunky personality, sense of humor and when he gets angry (which is not too often) later he will come back and cuddle. Love it!
