Best chicken ever!!

Or so exclaimed my kids after we made this last night

1 (16 ounce) jar salsa

1 (1.25 ounce) package dry taco seasoning mix

1 lime, juiced

3 tablespoons chopped fresh cilantro

3 pounds skinless, boneless chicken breast halves

Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

We just made nachos with it- the plan was to make tacos but dinner was running late and it was just easier. The chicken was SO good.

    This sounds good! I think I’ve done something similar before and you ate it over rice…but I could be a little out of my mind too.

    I’m starting the 17 day diet today, so I’ll have to make this and find a carb free option for me…maybe lettuce tacos? I could do that….or make it into a salad? I’m not sure why I’m typing while I think. Maybe I should think dirty thoughts and type them….

    Laundry, toilets, Sophia’s room. 🙂 Get it? dirty! I’m in a dorky mood.
