Breakfast Tacos

After living in Austin and moving away we have yet to find a decent place to get breakfast tacos- for like the last 20 years.

So like some of our other Austin faves (Double Daves pizza rolls) we decided to create our own.

Ok this isn’t actually the ones we make- it’s one I want to try. Recipe found here.

1 soft taco size tortilla
1 whole egg
1 egg white
10 baby spinach leaves
1/2 avocado, sliced
Half of an avocado photographed on white
1 slice red onion, cut in half and separated
3 Tbs canned black beans, drained and rinsed
2 Tbs Salsa
freshly ground black pepper

Scramble the egg and egg white with the spinach.

Lay the tortilla on a plate and add a few slices of avocado along with a few pieces of the red onion. Add the scrambled eggs and top with additional avocado, red onion, black beans and salsa. Sprinkle with freshly ground pepper. Enjoy!

Now for the ones we make- we buy the “make fresh” tortillas at Costco. Now that our stove has a built-in griddle it is super easy to make fresh tortillas. But even if you don’t have that it’s just as easy to make them in a pan.

So we start with that. We add eggs, potatoes (I love using fresh and/or especially red) but you can use hash brown. Or even french fries or tator tots if that’s all you have.

Next come turkey bacon (occasionally we will buy real bacon but not very often).

Lots of cheese on top.

And then salsa- I prefer Trader Joes.

It’s that easy and they are SO good. All my kids love them. Only one will add the salsa tho.
