{"id":10348,"date":"2013-12-28T15:28:11","date_gmt":"2013-12-28T15:28:11","guid":{"rendered":"http:\/\/www.elisalou.com\/blog\/?p=10348"},"modified":"2019-01-25T15:03:39","modified_gmt":"2019-01-25T15:03:39","slug":"taquitos","status":"publish","type":"post","link":"https:\/\/www.elisalou.com\/blog\/2013\/12\/28\/taquitos\/","title":{"rendered":"Taquitos!"},"content":{"rendered":"<p>Last night we tried these Taquitos that I found on Pinterest- <a href=\"http:\/\/www.cinnamonspiceandeverythingnice.com\/chubby-chicken-and-cream-cheese-taquitos\/\">recipe on this blog<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2013\/12\/Chubby-Chicken-Cream-Cheese.jpg\" alt=\"Chubby-Chicken-Cream-Cheese\" width=\"445\" height=\"600\" class=\"aligncenter size-full wp-image-10349\" srcset=\"https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2013\/12\/Chubby-Chicken-Cream-Cheese.jpg 445w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2013\/12\/Chubby-Chicken-Cream-Cheese-222x300.jpg 222w\" sizes=\"auto, (max-width: 445px) 100vw, 445px\" \/><\/p>\n<p>They were SOOO good!<\/p>\n<p>We made our <a href=\"https:\/\/elisalou.com\/blog\/2009\/02\/09\/salsa-verde\/\">fave green salsa to go with them.<\/a><\/p>\n<p>Recipe for Taquitos<\/p>\n<p>Ingredients<br \/>\n3 cups cooked shredded chicken (I like rotisserie)<br \/>\n6 ounces cream cheese, softened<br \/>\n1\/3 cup sour cream<br \/>\n1\/2 cup salsa<br \/>\n1 + 1\/2 cups shredded sharp cheddar cheese<br \/>\n1 + 1\/2 cups chopped baby spinach, stems removed<br \/>\ncoarse salt and fresh black pepper, to taste<br \/>\n9 &#8211; 10 (6-inch) flour tortillas<\/p>\n<p>vegetable or canola oil, for frying<\/p>\n<p>your choice for serving:<br \/>\nsour cream\/quacamole\/salsa\/taco sauce\/ranch dressing<\/p>\n<p>Instructions<\/p>\n<p>    In a large bowl mix together the chicken, cream cheese, sour cream, salsa, cheddar and spinach. Season to taste with salt and pepper.<br \/>\n    Working with one tortilla at a time add 2 heaping tablespoons of the chicken mixture off center and spread out like a log. Roll up and set seam side down on a platter. Repeat until all the tortillas are filled and rolled.<br \/>\n    Add enough oil to a large skillet to generously cover the bottom. Heat on medium to medium-low heat, cook tortillas in batches, turning to brown each side.
