I had pesto so I used that with it but could also use spinach.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/c6GEOHjWTX6LTHli4oXbEA-e1573918998506-768x1024.jpg\" alt=\"\" class=\"wp-image-16668\"\/><\/figure>\n\n\n\n<p>Costco has these double packs of organic butternut squash raviolis but I wanted to do something more with it than just throw a sauce on top like I did last week.<\/p>\n\n\n\n<p>So I came up with this<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li> Butternut Squash Ravioli<\/li><li>1\/2 cup pesto (I buy mine at Costco)<\/li><li>1 cup\u00a0ricota cheese<\/li><li>2 cups\u00a0mozzarella cheese, grated<\/li><li>3\u00a0cloves garlic, minced<\/li><li>1\/2 cup\u00a0parmesan cheese, grated<\/li><li>salt and pepper to taste<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/8qf3Ip9XQJKeoBh7pKKg-e1573918936230-768x1024.jpg\" alt=\"\" class=\"wp-image-16666\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/xQM2enm4TVeTTX6tWCw3wQ-1024x768.jpg\" alt=\"\" class=\"wp-image-16667\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/DDQv0BeATkm2wqwiepVLgA-1024x768.jpg\" alt=\"\" class=\"wp-image-16669\" srcset=\"https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/DDQv0BeATkm2wqwiepVLgA-1024x768.jpg 1024w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/DDQv0BeATkm2wqwiepVLgA-300x225.jpg 300w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2019\/11\/DDQv0BeATkm2wqwiepVLgA-768x576.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<p>Preheat oven to 375\u00b0. Cook ravioli according to package directions. Drain, cover and keep warm.<\/p>\n\n\n\n<p>Combine pesto, ricotta cheese, 1 cup mozzarella, and garlic in a bowl. Add salt and pepper to taste. Set aside.<\/p>\n\n\n\n<p>Lightly spray an 11 x 9in baking pan with spray. Add the first layer of ravioli to the bottom; add about \u00bd of the cheese\/pesto mixture. Top with \u00bd cup of mozzarella cheese. Finish off with another layer of ravioli, then remaining cheese\/pesto mixture and mozzarella cheese and top with parmesan cheese.<\/p>\n\n\n\n<p>Cover lasagna with aluminum foil and bake for about 30 minutes. Uncover the pan and bake for another 10 minutes until lightly browned.<\/p>\n\n\n\n<p>Remove pan from oven and let rest for about 5-10 minutes.
