It was a recipe his mom gave us and over the years we adapted and tried different versions. The original one calls for chicken so I will post that version but we don&#8217;t make it with chicken anymore. We either leave the chicken out completely (it&#8217;s hearty enough on it&#8217;s own) or we add tofu. It&#8217;s good both ways!<\/p>\n\n\n\n<p>Starting off with my new favorite <a rel=\"noreferrer noopener\" aria-label=\"colander (opens in a new tab)\" href=\"https:\/\/amzn.to\/31yA0kG\" target=\"_blank\">colander<\/a> again. Grease a 9\u00d713-inch casserole dish.<\/li><li>Heat the avocado oil in skillet over medium high heat and add onion,  until softened.<\/li><li>Add chili powder, cumin, garlic powder, salt, black beans, corn, Rotel, tomato sauce, and garlic. Simmer for 10-12 minutes.<\/li><li> Line the bottom of the dish with 6 tortillas.<\/li><li>Spread a layer of the chicken over the tortillas then top with a layer of the sauce and a layer of cheese.<\/li><li>Top with 6 more tortillas and repeat the layers adding chicken, sauce, and cheese.<\/li><li>Top with the last of the tortillas and a layer of cheese.<\/li><li>Cover with foil and place in oven and bake at 375 degrees F. for 30 minutes. Remove foil and continue to bake for 10 minutes, until cheese is melted and bubbling.
