I found this one on there and decided to change it up a bit to fit our tastes a bit more.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"4000\" height=\"3000\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2020\/08\/fullsizeoutput_6d05-4000x3000.jpeg\" alt=\"\" class=\"wp-image-17361\"\/><\/figure>\n\n\n\n<p>Our basil from the garden is on it&#8217;s last leg. My neighbor came over and harvested it for me while we were at the beach for a month so I am happy that it was worth the effort to grow. Now it&#8217;s leggy and the leaves are not growing very big. A sign that Summer is winding down.<\/p>\n\n\n\n<p>I asked Andy to grab some zucchini and squash at the store and then sent him a few recipe ideas to pick from. His reply, the one with bread crumbs. Because who doesn&#8217;t love a good breadcrumb pasta???<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"3000\" height=\"4000\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2020\/08\/fullsizeoutput_6d07-3000x4000.jpeg\" alt=\"\" class=\"wp-image-17362\"\/><\/figure>\n\n\n\n<p>We both gave it a thumbs up and will be adding into our rotation. That said I am off for a Peloton ride now.  Cole asked that I wait until he has a school break (he is doing his online work from the basement computer and that is where our bike is). I don&#8217;t understand why he doesn&#8217;t want his mom (sweating and dying) in the background. Not distracting at all \ud83d\ude42<\/p>\n\n\n\n<p>Enjoy!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"3000\" height=\"4000\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2020\/08\/fullsizeoutput_6d0b-3000x4000.jpeg\" alt=\"\" class=\"wp-image-17363\"\/><\/figure>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00a04\u00a0tablespoons\u00a0butter<\/li><li>\u00a02\u00a0cloves\u00a0garlic\u00a0minced<\/li><li>\u00a03\/4\u00a0cup\u00a0panko breadcrumbs<\/li><li>\u00a01 tbs. cup\u00a0finely chopped basil<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>\u00a01\u00a0lb.\u00a0 Whole Wheat Pasta<\/li><li>\u00a02\u00a0tablespoons\u00a0 Olive Oil<\/li><li>\u00a02\u00a0medium zucchini\u00a0chopped<\/li><li>\u00a02\u00a0yellow squash\u00a0chopped<\/li><li>\u00a03\u00a0cloves\u00a0garlic\u00a0minced<\/li><li>\u00a01\/4\u00a0teaspoon\u00a0crushed red pepper flakes (or more)<\/li><li>\u00a02\u00a0tablespoons\u00a0butter<\/li><li>\u00a01\u00a0cup\u00a0shredded Parmesan cheese<\/li><li>\u00a03\/4\u00a0cup\u00a0chopped basil leaves<\/li><li>\u00a0salt\u00a0to taste<\/li><li>\u00a0Extra shredded Parmesan cheese\u00a0for serving, optional<\/li><\/ul>\n\n\n\n<p><strong>Instructions<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li><strong>For the Brown Butter Breadcrumbs<\/strong>: Melt the butter in a medium skillet over medium heat and continue to cook, until the butter turns light brown in color. As soon as it is light golden brown, add in the breadcrumbs and garlic.  Stir until the breadcrumbs are moist with the butter. Add in the basil and salt. Keep stirring and cooking until the breadcrumbs are toasted. Set aside.<\/li><li><strong>For the Pasta<\/strong>: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. <\/li><li>While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the zucchini and yellow squash and cook for 5 minutes, stirring occasionally. Add in the garlic and crushed red pepper flakes.
