One of our favorites was Green Chili Enchiladas. I have modified them over the years and this is where I landed.<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1&nbsp;large&nbsp;chicken breast<\/li><li>8&nbsp;whole wheat tortillas<\/li><li>1 small&nbsp;finely chopped onion<\/li><li>2&nbsp;cups&nbsp;shredded Jack cheese<\/li><li>2 cans green chilis<\/li><li>8 0z block cream cheese<\/li><li>1 jar of verde salsa (I use Trader Joes)<\/li><li>3\/4 stick of butter<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Cook the chicken (grill or bake in the oven) and then shred<\/li><li>Finely dice the onion and saute in butter<\/li><li>Add green chilis once onions are translucent<\/li><li>Line the bottom of casserole dish with green salsa<\/li><li>Mix together the chicken, cream cheese, 1 cup of Jack cheese with the onions and chilis.
