The beans make is more like a healthy dip \ud83d\ude42<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"ingredients\">INGREDIENTS:<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>1 tablespoon olive oil<\/li><li>2 cloves garlic, minced<\/li><li>1 onion, diced<\/li><li>1 red bell pepper, diced<\/li><li>1 green bell pepper, diced<\/li><li>1 (15-ounce) can black beans, drained and rinsed<\/li><li>1 cup corn kernels, frozen, canned or roasted<\/li><li>1 teaspoon chili powder<\/li><li>1\/2 teaspoon cumin<\/li><li>Kosher salt and freshly ground black pepper, to taste<\/li><li>1 (4.5-ounce) can&nbsp;<a href=\"http:\/\/www.oldelpaso.com\/en\/Products\/condiments\/Green%20Chiles-Chopped.aspx\">Old El Paso\u2122 chopped green chiles<\/a>, drained<\/li><li>2 tablespoons chopped fresh cilantro leaves<\/li><li>4 (8-inch) whole wheat tortillas, chopped<\/li><li>1 (16-ounce) can&nbsp;<a href=\"http:\/\/www.oldelpaso.com\/Products\/rice-beans\/Fat-Free.aspx\">Old El Paso\u2122 fat free refried beans<\/a>, warmed<\/li><li>1 (10-ounce) can&nbsp;<a href=\"http:\/\/www.oldelpaso.com\/Products\/sauces\/Enchilada%20Sauce-Mild%20Red%2028oz.aspx\">Old El Paso\u2122 mild enchilada sauce<\/a><\/li><li>1 1\/2 cups reduced fat shredded Mexican blend cheese<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"directions\">DIRECTIONS:<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 375 degrees F. Lightly coat a 9\u00d713 baking dish with nonstick spray.<\/li><li>Heat olive oil in a large skillet over medium high heat. Add garlic, onion and bell peppers. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in black beans, corn, chili powder and cumin until heated through, about 1-2 minutes; season with salt and pepper, to taste. Stir in green chiles and cilantro; set aside.<\/li><li>Place tortillas evenly on the bottom of the baking dish. Spread refried beans evenly over the tortillas, followed by the onion mixture and enchilada sauce.
