I posted one a couple weeks ago and then I found this one on <a href=\"https:\/\/www.pinterest.com\/pin\/165436986302741723\/\" target=\"_blank\" rel=\"noreferrer noopener\">Pinterest<\/a> with tortellini and no pesto so I thought I would try it. I have to say I think I like it better (dare I say) without pesto. Maybe because it was more filling with the tortellini instead of regular pasta<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1&nbsp;package of cheese tortellini&nbsp;<\/li><li>1-2&nbsp;cups&nbsp;quartered cherry tomatoes<em> <\/em><\/li><li>2&nbsp;cups&nbsp;chopped baby spinach&nbsp;<\/li><li>1\/4&nbsp;cup&nbsp;slivered basil<\/li><li>8&nbsp;ounces&nbsp;mozzarella- I buy the big loafs at Costco and chop it up into small pieces but the small round balls would be less work <\/li><li>1\/3&nbsp;cup&nbsp;olive oil<\/li><li>2&nbsp;Tablespoons&nbsp;balsamic vinegar<\/li><li>1\/4&nbsp;teaspoon&nbsp;salt<\/li><li>black pepper<\/li><li>balsamic glaze<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Boil a large pot of well-salted water and cook tortellini according to package directions. Drain and set aside.<\/li><li>While tortellini cooks, chop the tomatoes, spinach, and basil. Drain mozzarella, if packed in water, or chop into pieces if using a block.<\/li><li>In a small jar or liquid measuring cup, combine olive oil, balsamic vinegar, salt, and pepper. Shake or stir well to combine.<\/li><li>Combine drained pasta, tomatoes, spinach, basil, mozzarella, and dressing in a large bowl. Toss to combine.
