I made <a href=\"https:\/\/www.elisalou.com\/blog\/2023\/03\/11\/fresh-salsa\/\">fresh salsa <\/a>to go along with it. Found the original recipe <a href=\"https:\/\/reciperunner.com\/green-chile-chicken-enchilada-skillet\/\">here<\/a> and tweaked it a little as I only had canned green chilis on hand (still very good) but next time I will for sure try with the fresh<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>2 teaspoons olive oil<\/li><li>1\/2 cup diced yellow onion<\/li><li>1 1\/4 teaspoons chili powder<\/li><li>1 teaspoon ground cumin<\/li><li>1\/4 teaspoon garlic powder<\/li><li>Salt and fresh ground black pepper to taste<\/li><li>2 cups cooked shredded chicken breasts or rotisserie chicken<\/li><li>15 ounce can black beans, rinsed and drained<\/li><li>1 cup diced fire roasted green chiles or two cans of diced green chilis<\/li><li>2 tablespoons chopped cilantro<\/li><li>15 ounce can green enchilada sauce<\/li><li>5 corn tortillas, cut into triangles<\/li><li>1 cup shredded Monterey Jack cheese<\/li><li>Avocado, cilantro and plain Greek yogurt or sour cream for garnish<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1665\" src=\"https:\/\/elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg.webp\" alt=\"\" class=\"wp-image-19752\" srcset=\"https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg.webp 1200w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg-600x833.webp 600w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg-216x300.webp 216w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg-768x1066.webp 768w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg-1107x1536.webp 1107w, https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2024\/03\/green-chile-chicken-enchilada-skillet-ingredients-photo.jpg-650x902.webp 650w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 425\u00b0 F. Cut the corn tortillas into 1\/8ths.<\/li><li>Heat the olive oil in a large oven safe skillet over medium high heat. Add the onion and spices to the skillet and saut\u00e9 for a couple minutes until the onion softens.<\/li><li>Lower the heat to medium and add in the shredded chicken, black beans, green chiles, cilantro, green enchilada sauce and season with salt and pepper. Stir everything together then add in the corn tortilla wedges. Stir to coat the tortillas in the sauce.<\/li><li>Top with the shredded cheese and place the skillet in the oven. Bake for 10-15 minutes or until it&#8217;s bubbly and the cheese is melted.
