I found this recipe on pinterest and added a whole different spin on it. Turned out so good!!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>12\u00a0ounces\u00a0elbow macaroni,\u00a0or whatever pasta you have on hand<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0butter<\/li>\n\n\n\n<li>1\/4\u00a0cup\u00a0flour<\/li>\n\n\n\n<li>1\/4\u00a0cup\u00a0minced onion<\/li>\n\n\n\n<li>2\u00a0cups milk,\u00a0I used whole<\/li>\n\n\n\n<li>1\u00a0cup\u00a0chicken broth<\/li>\n\n\n\n<li>8\u00a0ounces\u00a0extra sharp cheddar<\/li>\n\n\n\n<li>salt and pepper, to taste<\/li>\n\n\n\n<li>4\u00a0cups\u00a0fresh baby spinach<\/li>\n\n\n\n<li>1\/2 cup\u00a0shredded Parmesan<\/li>\n\n\n\n<li>1\/4\u00a0cup\u00a0seasoned panko bread crumbs<\/li>\n\n\n\n<li>1\/4 cup or more buffalo sauce<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"3000\" height=\"4000\" src=\"https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2025\/05\/IMG_7311-3000x4000.jpeg\" alt=\"\" class=\"wp-image-21449\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cook pasta in salted water according to package directions. <\/li>\n\n\n\n<li>Preheat oven to 375F.<\/li>\n\n\n\n<li>In a large skillet, melt butter. Add flour and cook over low heat stirring with a whisk.<\/li>\n\n\n\n<li>Add onion and cook another 2 minutes. Add milk and chicken broth and buffalo sauce and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick. Season with salt and pepper.<\/li>\n\n\n\n<li>Once it becomes thick, remove from heat, add cheese 1\/4 cup at a time and mix well until cheese is melted. Adjust salt and pepper to taste, add cooked macaroni and baby spinach.<\/li>\n\n\n\n<li>Pour into baking dish. Top with grated cheese and breadcrumbs. And more bufflalo sauce if desired. Spray the top of the bread crumbs with olive oil spray.<\/li>\n\n\n\n<li>Bake for 15-20 minutes, then broil for a few minutes to get the breadcrumbs golden.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"3000\" height=\"4000\" src=\"https:\/\/www.elisalou.com\/blog\/wp-content\/uploads\/2025\/05\/IMG_7312-3000x4000.jpeg\" alt=\"\" class=\"wp-image-21450\"\/><\/figure>\n\n\n\n<p>If you are like us and like things spicy add even more hot sauce!
