{"id":21526,"date":"2025-09-18T07:08:06","date_gmt":"2025-09-18T11:08:06","guid":{"rendered":"https:\/\/www.elisalou.com\/blog\/?p=21526"},"modified":"2025-10-10T10:22:58","modified_gmt":"2025-10-10T14:22:58","slug":"garlic-asparagus-pasta","status":"publish","type":"post","link":"https:\/\/www.elisalou.com\/blog\/2025\/09\/18\/garlic-asparagus-pasta\/","title":{"rendered":"Garlic Asparagus Pasta"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00a0lb\u00a0asparagus\u00a0cut into 1 1\/2 inch pieces- I love the skinny kind<\/li>\n\n\n\n<li>1\u00a0lb spaghetti<\/li>\n\n\n\n<li>1\/4\u00a0cup\u00a0olive oil<\/li>\n\n\n\n<li>6\u00a0garlic cloves\u00a0minced<\/li>\n\n\n\n<li>1\u00a0cup\u00a0grated fresh Parmesan cheese<\/li>\n\n\n\n<li>crushed red pepper flakes (how little or how much you prefer)<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cut asparagus into 1 1\/2 inch pieces.<\/li>\n\n\n\n<li>Bring a pot of salted water to a boil and cook the asparagus for 3 minutes or until bright green. Then put them in a bowl of ice water to stop the cooking process. This can be done ahead of time, just drain and put in the fridge.<\/li>\n\n\n\n<li>Boil the spaghetti. I like to do everything in one pot so I use a <a href=\"https:\/\/amzn.to\/4pzt8hM\">dutch oven<\/a>. Drain the pasta and add the oil to the pan with the minced garlic minced garlic cloves. Cook the garlic for about 1 minute, then stir in the blanched asparagus.<\/li>\n\n\n\n<li>Then use tongs to transfer the cooked spaghetti right into the pan, try to keep the pasta moving. Then fill a measuring cup with 1 cup of the pasta water and slowly pour it over the pasta in the pan.<\/li>\n\n\n\n<li>Then stir in 1 cup of grated Parmesan cheese, and crushed red pepper flakes, and salt and pepper to taste. <\/li>\n<\/ul>\n\n\n\n<p>If you don&#8217;t like asparagus you could use zucchini, squash, broccoli, really any veggie.
