Salmon and Asparagus

I am not a big seafood person which is shame since we live by the coast. But I do like salmon and my fave BY FAR is this ready to cook version from Costco. It is so good. And super easy- you just pop it in the oven.

Andy brought home a big bag of asparagus so I hopped on pinterest to find a recipe to try instead of just steaming it. I found one that looked yummy and it turned out really good!

  • 1 cup Panko*
  • 1/2 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 1 pound asparagus, trimmed
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  1. Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a large bowl, combine Panko and Parmesan; season with salt and pepper, to taste. Set aside.
  3. Working in batches, dredge asparagus in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
  4. Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp.
  5. Serve immediately.
