Summertime Vibes

With plans to head back to in person school in the Fall I am feeling the need to slow down the Summer. But of course it is flying by.

Oakley doesn’t like to swim as much as Hudson so we finally found a pool float that he likes.

Cole and Andy built some trellises for the beach house. We have been concentrating on getting that house pulled together and now I think we are going to shift and work on the house in Chapel Hill. We are considering putting in more patio area around the pool and in the backyard. Also a kitchen in the walk-out basement. I am excited to get that project started.

Didn’t get to spend Austin’s birthday with him so snagged some pictures off instagram. Happy 24th Austin!!

Eva got her 2nd shot. We are fully vaccinated!!!

One of my friends from Ohio came to visit so her son could check out UNC and Duke. So nice spending time with her again.

Eva has been on a medication to clear up her skin and she is almost done (yay!). She is obsessed when she gets blood drawn. It fascinates her!

We went back to the beach. I always put my pizza dough on the porch to rise.

Speaking of pizza, Austin is now vegan so I had to be creative with his pizza. I did a salsa base, plant based cheese, black beans, fresh jalepenos, fresh tomatoes, and red peppers. It was really good!

I also started putting Nutritional Yeast on my air popped popcorn instead of parmesan cheese. It is actually really good. And tastes like cheese!

When we replaced the golf carts that came with our beach house we decided to keep one of the old ones and turn it into a beach buggy.

Another fun easy meal I tried was open faced quesadilla. Or a tostada. I don’t know. Basically a tortilla, refried beans, and fun toppings. Cooked on the griddle.

I am usually the first one up at the beach. I make the coffee, feed all the animals, and sit on the porch and read.

This is the first year that we were Conservancy members so we got to go on a nighttime turtle walk to look for mama turtles that were coming ashore to lay eggs. One finally came up at 11:59pm to lay her eggs. So cool. Years ago we got see when they did a nest evacuation. That where they go in after the “boil” and get any little turtles that were left behind and didn’t make it out. We got to watch them head to ocean. Seriously one of my fave experiences. And how cute was little Eva 🙂
