Chicken Kabobs

This was my first time making these from scratch (including the marinade) and I wasn’t sure how they would turn out but we made them over the weekend when the grandparents were here and they were so good!

The best part is really you can add whatever veggies you want and like. I added a zucchini from our garden, peppers and onions.

I let the chicken sit in the marinade for a day and a half.

CHICKEN MARINADE

  • 1 ½ lbs chicken cut into 1 ½ inch cubes
  • ½ cup soy sauce
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh minced garlic or ½ tsp 
  • 1 tbsp of Italian Seasoning
  • 1 tsp red pepper flakes
  • 1 can of beer

Whisk it all together and then add then chicken and let it sit in the fridge. Chop the veggies and alternate them on the skewers. Plop on the grill and enjoy!
