Easy Green Chili Chicken Enchiladas

When I was in college my roomates and I would splurge every now and then and actually cook a big meal. One of our favorites was Green Chili Enchiladas. I have modified them over the years and this is where I landed.

Ingredients

  • 1 large chicken breast
  • 8 whole wheat tortillas
  • 1 small finely chopped onion
  • 2 cups shredded Jack cheese
  • 2 cans green chilis
  • 8 0z block cream cheese
  • 1 jar of verde salsa (I use Trader Joes)
  • 3/4 stick of butter

Instructions

  • Cook the chicken (grill or bake in the oven) and then shred
  • Finely dice the onion and saute in butter
  • Add green chilis once onions are translucent
  • Line the bottom of casserole dish with green salsa
  • Mix together the chicken, cream cheese, 1 cup of Jack cheese with the onions and chilis. Add salt and pepper
  • Roll mixture into tortillas and top with remaining verde salsa and top with remaining cheese.
  • Bake at 350 until golden brown, usually 20 minutes.
