Caprese Pasta Salad

I am so hooked on Caprese pasta. I posted one a couple weeks ago and then I found this one on Pinterest with tortellini and no pesto so I thought I would try it. I have to say I think I like it better (dare I say) without pesto. Maybe because it was more filling with the tortellini instead of regular pasta

  • 1 package of cheese tortellini 
  • 1-2 cups quartered cherry tomatoes
  • 2 cups chopped baby spinach 
  • 1/4 cup slivered basil
  • 8 ounces mozzarella- I buy the big loafs at Costco and chop it up into small pieces but the small round balls would be less work
  • 1/3 cup olive oil
  • 2 Tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • black pepper
  • balsamic glaze
  • Boil a large pot of well-salted water and cook tortellini according to package directions. Drain and set aside.
  • While tortellini cooks, chop the tomatoes, spinach, and basil. Drain mozzarella, if packed in water, or chop into pieces if using a block.
  • In a small jar or liquid measuring cup, combine olive oil, balsamic vinegar, salt, and pepper. Shake or stir well to combine.
  • Combine drained pasta, tomatoes, spinach, basil, mozzarella, and dressing in a large bowl. Toss to combine. Taste, add more salt and pepper, if desired, and serve.

Make it ahead and let it sit in the fridge to soak up all the oil and vinegar
